Young jack fruit

Normally, people take jack fruits when they are ripe.  Some how, if you never tried this before in your life time, better taste it before too old to taste!

Chop an unripe jack fruit and sliced off its skin with an extreme sharp cutting knife.  (It is best done under running water or your both hands rubbed with cooking oil before you do the job.  Or else the sticky sap from the unripe fruit will be sticky enough to glue your fingers together!!!)

After ripping off the fruit, then cut into cube forms or small pieces with the nuts embedded.  With thorough rinsing off the sap, you can heat up your wok.  (In between quick chop few slices of garlic, chillies and onions if you wish, add in archovies or prawn paste or dried prawns as your liking to stir the ingredients before adding the young jack fruit.)

Let it cook for some 20 minutes with minimum water and serve while hot.. Yummy .. sweet and tender.

Stewed Duck

Marinate the whole duck with five spices powder
Fry the garlic, onions and smashed lemon grass.
Add the whole duck and cook it under medium to small fire.
1 hour 20 minutes and if the meat is tender to eat.
Let it cool and later cut up the duck and ready to serve.

Lak Cheong & Sau mai

Add mackerel meat, onion, minced pork, salt, white pepper powder, some cabbage stalks, garlic (smashed) and chopped to pieces.

Mixed well the mixtures, wrap up in the beancurd skin.  Fry the lap cheong and cut to small cubes before serving.

If you want to make siu mai (meat dumpling), just wrap the ingredients using the flour made skin and then steam in the wok/cookware for some 20 minutes.  (Pictures from google internet)

Another way is to wrap up the ingredients using long cabbage leaves.  Cut the green leafy leaves to small sizes that can accomodate the size of a sau mai, steam and serve hot..


Sweet/sour pork ribs

1) Cut the pineapples into cubes
2) Marinate the pork ribs with corn flour for about 20 minutes before deep fry them and place them onto a big bowl.
3) Fry some garlic and onions with the pineapples.  When the pineapples are half cook, mixed the corn flour added with some water, stir well with the pineapples, add in salt to taste.

Once the ingredients are well cooked, pour over to the pork ribs and serve hot.

Sweet & sour fish

1) Grill the fish first and place on a nice plate.
2) Cut 3-4 tomatoes (small size), some cucumbers, green pepper and cook for about 15 minutes
     add with salt mixed with  corn flour.

*Pour the whole mixture of 2) onto the plate of fish and serve hot.


Mixed Soup

1) Sea cucumber cut to small pieces
2) Fish lips
3) Seaweed (purple type) add in few strands
4) soak the bean curd stick for 1/2 to 40 minutes first and cut to small pieces - add into the soup (about one big bowl of water - serving about 5 persons)
5) Add corn flour and some salt (msg if you wish) and  one to two eggs beaten.
6) During the serving, add black vinegar or lime juice and some pieces of celery.


Roasted Chicken

Clean the chicken thoroughly with feathers plucked, oily fats cut off & etc
Marinate the whole chicken with salt.
Clean few tumeric leaves and place onto the tray in the oven roaster.
Roast the chicken for 35 minutes on one side and then flip over roast the other side for 20 - 25 minutes.
Cut the meat to medium cubes and ready to serve.
